Hearty Hungarian Goulash: A Warm and Rustic Stew

Hungarian Goulash is a traditional stew that evokes the flavors of Eastern Europe. This robust dish features tender beef, a medley of vegetables, and rich paprika-infused broth. Its deep, savory taste is perfect for chilly evenings, providing comfort and warmth in every spoonful. Whether served over egg noodles, with a dollop of sour cream, or simply by itself, this goulash is sure to become a household favorite.

Ingredients:
– 2 lbs beef chuck, cut into 1-inch cubes
– 2 tablespoons olive oil
– 2 large onions, finely chopped
– 3 cloves garlic, minced
– 3 large carrots, sliced
– 2 large potatoes, peeled and diced
– 1 red bell pepper, chopped
– 1 green bell pepper, chopped
– 3 tablespoons sweet Hungarian paprika
– 1 teaspoon caraway seeds, crushed
– 1 teaspoon dried marjoram
– 1 bay leaf
– 1/4 cup tomato paste
– 4 cups beef broth
– Salt and pepper, to taste
– Fresh parsley, chopped for garnish

Instructions:
1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.

2. In the same pot, add the onions and garlic. Saute until the onions become translucent and the garlic is fragrant, about 5 minutes.

3. Return the beef to the pot. Stir in the paprika, caraway seeds, marjoram, and bay leaf. Cook, stirring constantly, for about 1 minute to develop the flavors.

4. Add the tomato paste and mix thoroughly to coat the beef and onions. Pour in the beef broth and bring the mixture to a simmer.

5. Add the carrots, potatoes, and bell peppers to the pot. Season with salt and pepper. Cover and simmer the goulash on low heat for 1.5 to 2 hours, or until the beef and vegetables are tender.

6. Once the stew is ready, remove the bay leaf and adjust the seasoning with salt and pepper if necessary.

7. Serve hot, garnished with fresh parsley. Enjoy the goulash on its own, or pair it with egg noodles or rustic bread.

This hearty Hungarian Goulash recipe ensures that each bite is a perfect blend of tender meat, hearty vegetables, and rich, savory broth. Enjoy this traditional dish that reflects the rich culinary heritage of Hungary.
