  • 1 green bell pepper, chopped

  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef cubes and cook until browned on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the chopped onions and cook until soft and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the sweet Hungarian paprika and caraway seeds, ensuring the onions and garlic are well-coated with the spices.
  4. Add the tomato paste and mix well. Return the browned beef to the pot and pour in the beef broth. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1 hour.
  5. After 1 hour, add the sliced carrots, cubed potatoes, and chopped bell peppers to the pot. Season with salt and pepper to taste. Continue to simmer for another 30-45 minutes, or until the vegetables are tender and the beef is fork-tender.
  6. Taste and adjust seasoning as necessary. If the goulash is too thick, you can add a bit more beef broth to reach your desired consistency.
