The Hearty Chicken and Honey-Glazed Veggie Delight is a wholesome dish that brings together the tenderness of chicken and the sweet, earthy flavors of honey-glazed vegetables. This dish is not only delectable but also nutritious, making it a perfect dinner option for families and gatherings.
Ingredients:
– 4 boneless, skinless chicken breasts
– 3 tablespoons honey
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– Salt and pepper to taste
– 1 large sweet potato, peeled and diced
– 2 carrots, peeled and sliced
– 1 red bell pepper, sliced
– 1 yellow bell pepper, sliced
– 1 zucchini, sliced
– 1 red onion, cut into wedges
– Fresh parsley for garnish (optional)
Instructions:
1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
2. In a small bowl, combine the honey, olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper. Mix well.
3. Place the diced sweet potato, carrots, bell peppers, zucchini, and red onion on the prepared baking sheet. Drizzle half of the honey mixture over the vegetables and toss them to coat evenly.
4. Season the chicken breasts with salt and pepper, then place them on top of the vegetables. Drizzle the remaining honey mixture over the chicken breasts.
5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender and caramelized.
6. Remove from the oven and let the dish rest for a few minutes before serving.
7. Garnish with fresh parsley, if desired, and serve warm.
