Discover the deliciousness of a traditional shepherd’s pie made with tender, ground turkey for a lighter and equally comforting meal. This dish layers savory turkey cooked with vegetables and herbs under a smoothly whipped potato topping.

Ingredients:

  • 1 lb ground turkey
  • 4 large russet potatoes, peeled and quartered
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup milk
  • 2 tablespoons butter
  • 1/4 cup grated Parmesan cheese (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Place the peeled and quartered potatoes in a large pot of salted water. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are tender.
  3. While the potatoes are cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and diced carrots. Cook until the onions are translucent and the carrots are tender, about 5-7 minutes.
  4. Add the minced garlic to the skillet and cook for another minute. Then, add the ground turkey, breaking it up with a spoon as it cooks. Continue cooking until the turkey is browned all over and fully cooked.
  5. Stir in the tomato paste, chicken broth, and dried thyme. Season with salt and pepper to taste. Let the mixture simmer for about 5-7 minutes until it has thickened slightly. Add the frozen peas and stir to combine. Remove from heat.
  6. Drain the cooked potatoes and return them to the pot. Add the milk, butter, and Parmesan cheese (if using). Mash the potatoes until they are smooth and creamy. Season with salt and pepper to taste.
  7. Spread the turkey mixture evenly in the bottom of an ovenproof dish. Carefully spread the mashed potatoes over the top of the turkey mixture, smoothing the surface with a spoon or spatula.
  8. Bake in the preheated oven for about 20-25 minutes, or until the top is golden brown and the filling is bubbling around the edges.
