Grandma’s Traditional Chicken and Spinach Cannelloni: A Creamy Delight from the Heart of Italy

This classic Italian dish, Chicken and Spinach Cannelloni, features tender pasta tubes filled with a rich blend of seasoned chicken, fresh spinach, and a mix of creamy cheeses. Perfectly baked in a luxurious béchamel sauce, this hearty and satisfying meal brings the comforting taste of Italy right to your table.

Ingredients:

  • 12 cannelloni pasta tubes
  • 2 cups cooked, shredded chicken breast
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 clove garlic, minced
  • 1/2 teaspoon nutmeg
  • Salt and pepper, to taste
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 3 cups milk
  • 1/2 cup grated Parmesan cheese (for the sauce)

Instructions:
1. Preheat oven to 375°F (190°C).
2. Cook the cannelloni tubes according to package instructions until al dente, then drain and rinse with cold water to stop the cooking. Set aside.
3. In a large mixing bowl, combine the shredded chicken, chopped spinach, ricotta cheese, mozzarella cheese, 1/2 cup Parmesan cheese, beaten egg, minced garlic, nutmeg, salt, and pepper. Mix until thoroughly combined and the filling is uniform.
4. Fill the cannelloni tubes with the chicken and spinach mixture, using a piping bag or spoon. Place filled cannelloni in a single layer in a greased baking dish.
5. In a saucepan over medium heat, melt the butter. Stir in the flour and cook for 1-2 minutes until it forms a paste (roux).
6. Gradually add the milk, whisking constantly to prevent lumps. Cook for about 5-7 minutes, or until the sauce thickens.
7. Remove from heat and stir in 1/2 cup grated Parmesan cheese. Season with salt and pepper to taste.
8. Pour the béchamel sauce evenly over the filled cannelloni in the baking dish.
9. Sprinkle more mozzarella or Parmesan cheese on top for a golden crust.
10. Bake in the preheated oven for 25-30 minutes, or until the cannelloni is heated through and the top is golden brown.
11. Let stand for a few minutes before serving. Garnish with fresh basil or parsley if desired.

Serve this delicious Chicken and Spinach Cannelloni with a side salad and a slice of garlic bread for a complete and satisfying meal. Enjoy!
