Garlic Shrimp Scampi: A Savory Seafood Delight
Garlic Shrimp Scampi is a delectable, savory dish that brings together the rich flavors of garlic, succulent shrimp, and a buttery, lemony sauce, all complemented by a dash of white wine and fresh parsley. This classic Italian-American dish is perfect for both a quick weekday dinner and an elegant dinner party. Serve it over pasta or with a side of crusty bread to soak up the luscious sauce.
Ingredients:
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 6 cloves garlic, minced
- 1/4 cup dry white wine (such as Sauvignon Blanc)
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- 1/4 cup fresh parsley, chopped
- Cooked pasta or crusty bread for serving
Instructions:
- In a large skillet, heat the butter and olive oil over medium heat until the butter is melted.
- Add the minced garlic and sauté for about 1 minute, until fragrant and lightly golden. Be careful not to burn the garlic.
- Stir in the red pepper flakes (if using) and cook for an additional 30 seconds.
- Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Do not overcook the shrimp.
- Remove the shrimp from the skillet and set aside in a bowl.
- To the same skillet, add the white wine and lemon juice, scraping up any browned bits from the bottom of the pan. Allow the mixture to simmer and reduce slightly, about 2-3 minutes.
- Season the sauce with salt and freshly ground black pepper to taste.
- Return the shrimp to the skillet, stirring to coat them in the sauce. Heat through for 1-2 minutes.
- Remove from heat and stir in the chopped parsley.
- Serve the Garlic Shrimp Scampi immediately over cooked pasta or with crusty bread. Enjoy!
