Ingredients:

  • 1 cup wild rice
  • 2 cups water or vegetable broth
  • 1 block (14 oz) firm tofu, pressed and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup sugar snap peas
  • 1 small red onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons grated fresh ginger
  • 3 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions:

  1. In a medium saucepan, combine the wild rice and water (or vegetable broth). Bring to a boil, then reduce heat to low, cover, and simmer for about 45-50 minutes or until the rice is tender and the water is absorbed. Fluff with a fork and set aside.
  2. While the rice is cooking, combine the cubed tofu with 1 tablespoon of soy sauce and 1 tablespoon of sesame oil in a bowl. Let it marinate for at least 15 minutes.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove the tofu from the skillet and set aside.
  4. In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the red and yellow bell peppers, sugar snap peas, and red onion. Stir-fry for about 5 minutes or until the vegetables are tender-crisp.
  5. Add the garlic and ginger to the skillet and cook for another 1-2 minutes until fragrant.
  6. Return the tofu to the skillet and add the cooked wild rice.
  7. In a small bowl, whisk together the remaining 1 tablespoon of soy sauce, hoisin sauce, and rice vinegar. Pour the sauce over the tofu and vegetable mixture and toss to coat everything evenly.
  8. Cook for another 3-4 minutes until everything is heated through and well combined.
  9. Season with salt and pepper to taste. Garnish with fresh cilantro and sesame seeds if desired.
