  • 1 block (14 oz) firm tofu, pressed and cubed

  • 1 tablespoon sesame oil

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup sugar snap peas
  • 1 small red onion, thinly sliced
  • 3 cloves garlic, minced

  • 1 tablespoon rice vinegar
  • 1/4 cup chopped fresh cilantro

  6. Return the tofu to the skillet and add the cooked wild rice.
  7. In a small bowl, whisk together the remaining 1 tablespoon of soy sauce, hoisin sauce, and rice vinegar. Pour the sauce over the tofu and vegetable mixture and toss to coat everything evenly.
  8. Cook for another 3-4 minutes until everything is heated through and well combined.
