Flavorful Herb-Stuffed Chicken Breast
This delightful dish features tender chicken breasts filled with a delightful mixture of fresh herbs, garlic, and a touch of lemon zest. The herb stuffing imparts a burst of flavor to the chicken, making it a perfect choice for a special dinner. Serve it with a side of roasted vegetables or a fresh salad to complete your meal.
Ingredients:
– 4 boneless, skinless chicken breasts
– 1 cup fresh spinach, chopped
– 1/4 cup fresh basil, chopped
– 1/4 cup fresh parsley, chopped
– 1/4 cup grated Parmesan cheese
– 2 cloves garlic, minced
– Zest of 1 lemon
– Salt and pepper to taste
– 2 tablespoons olive oil
– Toothpicks or kitchen twine
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a medium mixing bowl, combine the spinach, basil, parsley, Parmesan cheese, minced garlic, and lemon zest. Season with salt and pepper to taste.
3. Lay the chicken breasts on a clean work surface. Using a sharp knife, slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
4. Stuff each chicken breast with the herb mixture, using toothpicks or kitchen twine to secure the opening if necessary.
5. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and cook for about 3-4 minutes on each side, or until golden brown.
6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
7. Remove the chicken from the oven and let it rest for a few minutes before serving.
