Ingredients:
– 4 boneless, skinless chicken breasts
– 1 cup fresh spinach, chopped
– 1/4 cup fresh basil, chopped
– 1/4 cup fresh parsley, chopped
– 1/4 cup grated Parmesan cheese
– 2 cloves garlic, minced
– Zest of 1 lemon
– Salt and pepper to taste
– 2 tablespoons olive oil
– Toothpicks or kitchen twine
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a medium mixing bowl, combine the spinach, basil, parsley, Parmesan cheese, minced garlic, and lemon zest. Season with salt and pepper to taste.
3. Lay the chicken breasts on a clean work surface. Using a sharp knife, slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
