Quinoa Tabbouleh is a delightful twist on the traditional Middle Eastern salad, using nutritious quinoa instead of the usual bulgur wheat. This vibrant dish is perfect as a side or a light main, combining fresh vegetables, herbs, and a zesty lemon dressing to create a refreshing and satisfying meal.

Ingredients:

• 1 cup quinoa, rinsed
• 2 cups water
• 1/4 teaspoon salt
• 1 cup chopped fresh parsley
• 1/2 cup chopped fresh mint
• 1/2 cup chopped green onions
• 1 cup diced tomatoes
• 1 cucumber, diced
• 1/4 cup fresh lemon juice
• 1/4 cup extra virgin olive oil
• Salt and pepper to taste

Instructions:

1. Combine the quinoa, water, and 1/4 teaspoon of salt in a medium saucepan. Bring to a boil over medium-high heat, then reduce to a simmer and cover. Cook until the quinoa has absorbed all the water, about 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and let cool completely.
2. In a large bowl, combine the cooled quinoa, parsley, mint, green onions, tomatoes, and cucumber.
3. In a small bowl, whisk together the lemon juice and olive oil. Pour over the quinoa mixture and toss to coat evenly.
4. Season with salt and pepper to taste. Toss again to combine.
