Description: This Exquisite Mexican Jalapeño Cornbread Casserole is a delightful fusion of flavors that combines the zesty kick of jalapeños with the sweet, comforting taste of cornbread. Ingredients:
– 1 cup of cornmeal
– 1 cup of all-purpose flour
– 1 tablespoon of baking powder
– 1/2 teaspoon of baking soda
– 1 teaspoon of salt
– 1/2 cup of sugar
– 1 cup of buttermilk
– 2 large eggs
– 1/2 cup of melted butter
– 1 cup of corn kernels (fresh or canned, drained)
– 3-4 finely chopped jalapeños
– 1 cup of shredded cheddar cheese
– 1/2 cup of chopped green onions
– 1/4 cup of chopped cilantro (optional)

Instructions:
1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish or a similarly sized casserole dish.
2. In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, and sugar until well combined.
3. In another bowl, beat together the buttermilk, eggs, and melted butter.
4. Gradually add the wet ingredients to the dry ingredients, mixing just until combined (do not overmix).
5. Fold in the corn kernels and finely chopped jalapeños. If you like a lot of spice, you can add more jalapeños to taste.
6. Pour half of the batter into the prepared baking dish and spread it out evenly.
7. Sprinkle half of the shredded cheddar cheese, green onions, and chopped cilantro (if using) over the batter.
8. Pour the remaining batter over the cheese and vegetables, spreading it evenly to cover them.
9. Top with the remaining shredded cheddar cheese.
10. Bake in the preheated oven for about 25-30 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
11. Let the casserole cool for a few minutes before serving.

Serving Suggestions:
