Dublin Coddle: A Hearty Irish Sausage, Bacon, and Potato Stew
Dublin Coddle is a classic Irish comfort food, often enjoyed as a warming dish on cold evenings. Traditionally, it’s a hearty stew made with sausages, bacon, potatoes, and onions that is slowly simmered to bring out rich and flavorful aromas. This dish is simple yet satisfying, perfect for a family meal or a gathering.
Ingredients:
– 8 thick pork sausages
– 8 slices of bacon, chopped
– 4 large potatoes, peeled and thickly sliced
– 2 large onions, sliced
– 2 cups chicken broth
– 1/2 cup stout beer (optional, for extra depth of flavor)
– Freshly ground black pepper
– Fresh parsley, chopped (for garnish)
Instructions:
1. Preheat your oven to 150°C (300°F).
2. Brown sausages: In a large, oven-safe pot or Dutch oven, lightly brown the sausages over medium heat. Remove them from the pot and set them aside.
3. Cook bacon: In the same pot, add the chopped bacon and cook until it becomes crisp. Use a slotted spoon to remove the bacon pieces and place them with the sausages.
4. Layer vegetables and meat: Begin layering the potatoes and onions in the pot. Start with a layer of potatoes, followed by onions, sausages, and bacon. Repeat the layers until all ingredients are used.
5. Add liquid: Pour the chicken broth over the layered ingredients. If you are using stout beer, add it now as well.
6. Season: Season with freshly ground black pepper.
7. Simmer: Bring the pot to a gentle simmer on the stove.
8. Bake: Cover the pot with a lid and transfer it to the preheated oven. Bake for about 2 hours, or until the potatoes are tender and the flavors have melded together.
9. Serve: Remove from the oven, garnish with chopped fresh parsley, and serve hot.
