Ingredients:

For the crust:
– 1 1/2 cups (180g) digestive biscuits or graham crackers, crushed
– 1/4 cup (50g) sugar
– 1/2 cup (115g) unsalted butter, melted

For the lemon jelly filling:
– 1 cup (240ml) lemon juice (freshly squeezed is best)
– 1 cup (240ml) water
– 1 1/4 cups (250g) sugar
– 4 tablespoons (40g) cornstarch
– 1 tablespoon lemon zest
– 4 large egg yolks
– 1/4 teaspoon salt
– 2 tablespoons unsalted butter
– 2 packets (14g total) unflavored gelatin
– 1/4 cup (60ml) cold water

Instructions:

1. Prepare the crust:
1. Preheat your oven to 350°F (175°C).
2. In a medium bowl, combine the crushed digestive biscuits (or graham crackers) with the sugar and melted butter.
3. Press the mixture into the bottom and up the sides of a 9-inch tart pan with a removable bottom.
4. Bake the crust for 10 minutes, then let it cool completely on a wire rack.

2. Prepare the lemon jelly filling:
1. In a saucepan, combine the lemon juice, water, sugar, cornstarch, lemon zest, egg yolks, and salt. Whisk to combine and cook over medium heat, stirring constantly until the mixture thickens and comes to a boil.
2. Once boiling, continue to cook for an additional 1-2 minutes, then remove from heat. Stir in the butter until fully melted and incorporated.
3. In a small bowl, sprinkle the unflavored gelatin over the cold water and let it sit for about 5 minutes to bloom.
4. Once the gelatin has bloomed, microwave it for about 15-20 seconds until it’s completely dissolved.
5. Stir the dissolved gelatin into the lemon mixture until well combined.

3. Assemble the tart:
1. Pour the lemon jelly filling into the cooled tart crust, spreading it out evenly.
2. Refrigerate the tart for at least 4 hours, or until the filling is set and firm.

4. Serve and enjoy:
1. Once fully set, carefully remove the tart from the tart pan and transfer it to a serving platter.
2. Slice and serve chilled, garnished with fresh berries, whipped cream, or a sprinkle of powdered sugar if desired.

Enjoy your refreshing, zesty lemon jelly tart as a delightful dessert that will brighten any meal!
