Delicious Vietnamese Pho with a Twist of Prawns and Vegetables

Pho is a traditional Vietnamese soup that’s aromatic, comforting, and deeply satisfying. This version takes the classic Pho and adds a wonderful twist by incorporating succulent prawns and a variety of fresh vegetables for added texture and flavor. This rich and flavorful broth, accompanied by rice noodles and garnished with fresh herbs, makes this dish both wholesome and delightful.

Ingredients:

For the Broth:

– 2 tablespoons vegetable oil
– 2 large onions, halved
– 4-inch piece of ginger, sliced
– 5-6 cloves of garlic, smashed
– 4 cups beef stock
– 4 cups chicken stock
– 1 tablespoon fish sauce
– 1 tablespoon soy sauce
– 2 tablespoons sugar
– 2 cinnamon sticks
– 4 star anise
– 6 cloves
– 1 fennel bulb, quartered

For the Pho:

– 200 grams rice noodles
– 300 grams prawns, peeled and deveined
– 2 cups bean sprouts
– 1 cup fresh spinach leaves
– Fresh basil leaves
– Fresh cilantro
– Fresh mint leaves
– 1 chili pepper, sliced (optional)
– 2 limes, cut into wedges
– 4 green onions, sliced
– Soy sauce (for serving)
– Fish sauce (for serving)
– Hoisin sauce (for serving)

Instructions:

## 1. Prepare the Broth:

1. Heat the vegetable oil in a large pot over medium heat. Add the onions, ginger, and garlic. Sauté until the onions are charred and the ginger and garlic are aromatic, about 5-7 minutes.
2. Add the beef and chicken stock to the pot. Stir in the fish sauce, soy sauce, and sugar.
3. Add the cinnamon sticks, star anise, cloves, and fennel bulb. Bring the pot to a boil.
4. Once boiling, reduce to a simmer and let the broth cook for at least 45 minutes, allowing the flavors to meld together. Skim off any impurities that float to the top.
5. Strain the broth through a fine sieve into another large pot. Discard the solids.

## 2. Cook the Noodles and Prawns:

1. Cook the rice noodles according to the package instructions. Drain and set aside.
2. Add the prawns to the hot broth and simmer for about 2-3 minutes, until they turn pink and are fully cooked.

## 3. Assemble the Pho:

1. Divide the cooked rice noodles among serving bowls.
2. Ladle the hot broth and prawns over the noodles.
3. Top with bean sprouts, spinach leaves, basil, cilantro, and mint.
4. For an extra kick, add sliced chili pepper if desired.
5. Serve with lime wedges, green onions, soy sauce, fish sauce, and hoisin sauce on the side.

Enjoy your Delicious Vietnamese Pho with a Twist of Prawns and Vegetables! This dish is perfect for any occasion and is sure to impress with its rich flavors and aromatic qualities.
