Ingredients

For the Dip:
– 4 ears of corn, shucked
– 1 tablespoon olive oil
– 1/2 teaspoon smoked paprika
– 1/2 teaspoon chili powder
– 1/2 teaspoon ground cumin
– Salt and pepper to taste
– 1/2 cup lime-infused feta cheese, crumbled (see note below)
– 1/4 cup mayonnaise
– 1/4 cup sour cream
– 1 small jalapeño, finely chopped (seeds removed for less heat)
– 2 tablespoons chopped fresh cilantro
– Juice of 1 lime (about 2 tablespoons)

For Serving:
– Tortilla chips
– Lime wedges
– Additional chopped cilantro for garnish

Instructions

1. Preheat your grill to high heat. Alternatively, you can use a grill pan on the stovetop.
2. Prepare and season the corn: Rub the ears of corn with olive oil and sprinkle with smoked paprika, chili powder, ground cumin, salt, and pepper.
3. Grill the corn: Place the seasoned corn on the grill and cook, turning occasionally, until it is charred and tender, about 10-12 minutes. Remove from the grill and let cool slightly.
4. Cut the kernels from the cobs: Using a sharp knife, carefully slice the corn kernels off the cobs into a large bowl.
5. Combine the ingredients: In the bowl with the corn, add the lime-infused feta, mayonnaise, sour cream, chopped jalapeño, cilantro, and lime juice. Mix well until all ingredients are thoroughly combined.
6. Season to taste: Taste the dip and adjust seasoning with additional salt, pepper, or lime juice as desired.
7. Serve: Transfer the dip to a serving bowl and garnish with extra chopped cilantro and lime wedges. Serve alongside tortilla chips.

Note

Lime-infused feta cheese can be found at some specialty cheese shops or made at home by crumbling fresh feta into a bowl and mixing it with the zest and juice of one lime. Let it marinate for at least an hour before using it in the recipe to ensure the flavors meld.
