Crazy Citrus Zest Cheesecake

Indulge in a tangy and creamy dessert with this Crazy Citrus Zest Cheesecake. This delightful cheesecake combines the refreshing flavors of lemon, lime, and orange, making it a perfect treat for any occasion. The smooth, rich filling pairs wonderfully with the buttery graham cracker crust, creating a harmonious balance of textures and flavors.

Ingredients:

For the crust:
– 1 ½ cups graham cracker crumbs
– ¼ cup granulated sugar
– ½ cup melted butter

For the filling:
– 3 (8 oz) packages cream cheese, softened
– 1 cup granulated sugar
– 3 large eggs
– 1 teaspoon vanilla extract
– Zest of 1 lemon
– Zest of 1 lime
– Zest of 1 orange
– ¼ cup fresh lemon juice
– ¼ cup fresh lime juice
– ¼ cup fresh orange juice

For the topping:
– Whipped cream (optional)
– Extra citrus zest for garnish

Instructions:

1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan lightly with butter or cooking spray.

2. Prepare the crust: In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottom of the prepared springform pan, forming an even layer.

3. Prepare the filling: In a large bowl, beat the cream cheese and granulated sugar with an electric mixer until smooth and creamy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract, lemon zest, lime zest, orange zest, and the juices.

4. Pour the filling over the crust in the springform pan, spreading it out evenly.

5. Bake the cheesecake: Place the springform pan on a baking sheet to catch any drips. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool inside the oven with the door slightly open for about 1 hour.

6. Remove the cheesecake from the oven and allow it to cool completely at room temperature. Once cooled, refrigerate for at least 4 hours or overnight for the best results.

7. Serve: When ready to serve, run a knife around the edges of the cheesecake to loosen it from the pan. Remove the sides of the springform pan. Garnish with whipped cream and extra citrus zest, if desired. Slice and enjoy your Crazy Citrus Zest Cheesecake!
