Cozy Winter Squash and Zesty Yogurt Stew

Ingredients:
– 1 medium butternut squash, peeled and cubed
– 1 large yellow onion, chopped
– 2 cloves garlic, minced
– 1 tablespoon olive oil
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1/2 teaspoon smoked paprika
– 1/4 teaspoon ground cinnamon
– 4 cups vegetable broth
– 1 can (15 oz) chickpeas, drained and rinsed
– 1 cup plain Greek yogurt
– 1 tablespoon lemon zest
– 2 tablespoons fresh parsley, chopped
– Salt and pepper to taste
Instructions:
1. In a large pot, heat the olive oil over medium heat. Add the chopped yellow onion and cook until it becomes translucent (around 5 minutes). Add the minced garlic and cook for another minute.

4. Using an immersion blender, blend the mixture until smooth. Alternatively, you can transfer the mixture to a regular blender in batches and blend until smooth, then return to the pot.
5. Stir in the chickpeas and let the stew simmer for another 5 minutes until the chickpeas are heated through. Season with salt and pepper to taste.
6. In a small bowl, combine the Greek yogurt with the lemon zest.
7. Serve the stew hot, topped with a generous dollop of the zesty yogurt mixture and a sprinkle of fresh parsley.
