Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced
  • 1 cup chopped tomatoes
  • 1 cup vegetable broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup breadcrumbs (preferably whole grain)
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons finely chopped fresh parsley
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Sauté the Vegetables: In a large ovenproof skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Add Vegetables: Stir in the carrots, celery, and red bell pepper, and cook for about 5 minutes. Add the sliced zucchini and chopped tomatoes, and cook for another 3-4 minutes until the vegetables begin to soften.
  4. Simmer: Pour in the vegetable broth, add the frozen peas, and sprinkle in the dried thyme and oregano. Season with salt and pepper to taste. Let the mixture simmer for about 10 minutes.
  5. Prepare the Topping: In a small bowl, combine the breadcrumbs, grated Parmesan cheese, chopped fresh parsley, melted butter, and garlic powder. Mix until well combined.
  6. Assemble and Bake: Spread the breadcrumb mixture evenly over the top of the vegetable mixture in the skillet. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and crispy.
  7. Serve: Remove from the oven and let cool for a few minutes before serving. Enjoy your Classic Vegetable Casserole with Garlicky Bread Crust!
