Classic New England Boiled Dinner
The New England Boiled Dinner is a hearty, comforting dish that has roots in traditional New England cuisine. This one-pot meal consists of corned beef brisket, cabbage, potatoes, and carrots, all simmered together until tender. The combination of savory and slightly salty flavors from the corned beef pairs perfectly with the sweetness of the vegetables.
Ingredients:
– 1 (4-pound) corned beef brisket, including spice packet
– 10 cups water
– 1 large onion, quartered
– 3 cloves garlic, peeled
– 1 tablespoon black peppercorns
– 3 bay leaves
– 6 medium carrots, peeled and cut into 2-inch pieces
– 6 medium red potatoes, halved
– 1 medium head of green cabbage, cored and cut into wedges
– 1/4 cup chopped fresh parsley (optional)
Instructions:
1. Place the corned beef brisket in a large pot or Dutch oven. Add the water, onion, garlic, peppercorns, and bay leaves.
