2 tablespoons vegetable oil

1 pound smoked sausage, sliced

3 stalks celery, chopped
4 cloves garlic, minced
1 (14.5-ounce) can diced tomatoes, with juice
1 cup long-grain white rice
2 1/2 cups chicken broth
1 teaspoon dried thyme
2 teaspoons paprika
1 teaspoon cayenne pepper (optional, for heat)
2 bay leaves
Salt and pepper, to taste
3 green onions, sliced (for garnish)
Chopped parsley, for garnish

Instructions:

1. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and cook until lightly browned all over. Remove the chicken and set aside.
2. In the same pot, add the smoked sausage and cook until browned. Remove the sausage and set aside with the chicken.
3. Add the onions, bell pepper, celery, and garlic to the pot, cooking and stirring until the vegetables are softened, about 5-7 minutes.
4. Return the chicken and sausage to the pot. Stir in the diced tomatoes (with their juice), rice, chicken broth, thyme, paprika, cayenne pepper (if using), bay leaves, salt, and pepper. Bring to a boil.
5. Reduce the heat to low, cover the pot, and simmer for about 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid. Stir occasionally to prevent sticking.
6. Taste and adjust seasoning, if needed. Remove the bay leaves before serving.
7. Garnish with sliced green onions and chopped parsley before serving.
