This recipe combines tender chicken, juicy tomatoes, and aromatic herbs to create a culinary masterpiece.

Ingredients:
– 1 whole chicken, cut into 8 pieces
– Salt and pepper to taste
– 2 tablespoons olive oil
– 1 large onion, chopped
– 2 cloves garlic, minced
– 2 tablespoons brandy (optional)
– 1 cup chicken broth
– 1 can (14.5 ounces) diced tomatoes
– 1/2 cup dry white wine
– 1 teaspoon dried thyme
– 1 bay leaf
– 1/2 cup black olives, pitted and halved
– 1/4 cup capers
– Fresh parsley, chopped, for garnish

Instructions:
1. Season the chicken pieces with salt and pepper.
2. In a large skillet, heat the olive oil over medium heat. Carefully add the chicken pieces and brown them on all sides. Once browned, remove the chicken and set aside.
