Bubble and Squeak: A Traditional British Comfort Food

Bubble and Squeak is a beloved British dish typically made from leftover vegetables, primarily potatoes and cabbage, that are pan-fried until crispy. It’s named after the bubbling and squeaking sounds it makes as it cooks. This dish is perfect as a side or a main meal and is an excellent way to use up any leftover veggies from a Sunday roast.

Ingredients:
– 4 large potatoes, peeled and diced
– 2 cups shredded cabbage
– 1 onion, finely chopped
– 2 tablespoons butter
– 2 tablespoons vegetable oil
– Salt and pepper to taste

Instructions:

1. Boil the potatoes in a large pot of salted water until tender, about 10-15 minutes. Drain and set aside.
2. Steam or boil the shredded cabbage until just tender, about 5 minutes. Drain and set aside.
3. In a large frying pan, heat the butter and vegetable oil over medium heat.
4. Add the onion and cook until soft and translucent, about 5 minutes.
5. Add the boiled potatoes and cooked cabbage to the frying pan. Season with salt and pepper.
6. Press the mixture firmly into the pan with the back of a spatula.
7. Cook on medium heat, without stirring, until the bottom is golden brown and crispy, about 10 minutes.
8. Carefully flip the mixture over, pressing down again, and cook the other side until crispy, about 8-10 minutes more.
9. Serve hot as a side dish or a main course.

Enjoy your traditional Bubble and Squeak, a simple yet delightful dish brimming with rustic charm!
