Balsamic Fig Glazed Chicken with Garlic Butter Broccoli
This delightful dish combines the rich, sweet flavors of balsamic-glazed figs with succulent chicken breasts, accompanied by savory garlic butter broccoli. Perfect for a special dinner or a family meal, this recipe offers a harmonious blend of tastes and textures.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup fresh figs, halved
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 cups broccoli florets
- 3 tablespoons butter
- 1/2 teaspoon red pepper flakes (optional)
Instructions:
For the Chicken:
- Preheat your oven to 375°F (190°C).
- Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
- Season the chicken breasts with salt and pepper.
- Add the chicken to the skillet and cook for 4-5 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Cook for about 1 minute, until fragrant.
- Add the balsamic vinegar and honey to the skillet. Stir well to combine and bring the mixture to a simmer.
- Place the chicken back in the skillet, along with the figs. Spoon some of the glaze over the chicken and transfer the skillet to the preheated oven.
- Bake for 15-20 minutes, or until the chicken is cooked through and the figs are tender.
- Remove the skillet from the oven and let it rest for a few minutes before serving.
For the Garlic Butter Broccoli:
- While the chicken is baking, bring a large pot of salted water to a boil.
- Add the broccoli florets and cook for 3-4 minutes, until bright green and tender-crisp. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes (if using) and cook for 1 minute, until fragrant.
- Add the cooked broccoli to the skillet and toss to coat in the garlic butter. Season with salt and pepper to taste.
To Serve:
