Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh figs, halved
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cups broccoli florets
  • 3 tablespoons butter
  • 1/2 teaspoon red pepper flakes (optional)

Instructions:

For the Chicken:

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
  3. Season the chicken breasts with salt and pepper.
  4. Add the chicken to the skillet and cook for 4-5 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Cook for about 1 minute, until fragrant.
  6. Add the balsamic vinegar and honey to the skillet. Stir well to combine and bring the mixture to a simmer.
  7. Place the chicken back in the skillet, along with the figs. Spoon some of the glaze over the chicken and transfer the skillet to the preheated oven.
  8. Bake for 15-20 minutes, or until the chicken is cooked through and the figs are tender.
  9. Remove the skillet from the oven and let it rest for a few minutes before serving.

For the Garlic Butter Broccoli:

  1. While the chicken is baking, bring a large pot of salted water to a boil.
  2. Add the broccoli florets and cook for 3-4 minutes, until bright green and tender-crisp. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes (if using) and cook for 1 minute, until fragrant.
  4. Add the cooked broccoli to the skillet and toss to coat in the garlic butter. Season with salt and pepper to taste.

To Serve:
Arrange the balsamic fig glazed chicken on a serving platter and spoon the remaining glaze and figs over the top. Serve alongside the garlic butter broccoli. Enjoy this flavorful and elegant meal!
