– 2 cups of pre-cooked cornmeal (such as P.A.N.)
– 2 1/2 cups of warm water
– 1 teaspoon of salt
– 1 tablespoon of vegetable or canola oil
– Optional: fillings such as cheese, shredded chicken, avocado, black beans, or ham

Instructions:

1. In a large bowl, combine the cornmeal and salt.
2. Gradually add the warm water to the cornmeal mixture, stirring continuously to avoid lumps. Let the mixture rest for about 5-10 minutes to allow the cornmeal to absorb the water.
3. Once the mixture has rested, knead the dough with your hands until it’s smooth and free of cracks.
4. Divide the dough into 8 equal portions and shape each portion into a ball. Flatten each ball into a disc about 1/2 inch thick.
5. Heat a large skillet or griddle over medium heat and lightly grease it with vegetable or canola oil.
6. Cook the arepas on the skillet for about 5-7 minutes on each side, or until they develop a golden-brown crust. You can also finish cooking them in a preheated oven at 350°F (175°C) for another 10 minutes if desired.
7. Once cooked, let the arepas cool slightly. Then cut them horizontally to create a pocket for your desired fillings.
8. Fill the arepas with your favorite ingredients. Some traditional options include grated cheese, shredded chicken, avocado slices, black beans, or ham.

Serving Suggestions:
Serve the arepas hot with fillings of your choice. They are excellent on their own or with a side of fresh salad or a dipping sauce like guasacaca (a Venezuelan avocado sauce) for an added burst of flavor. Enjoy the authentic taste of Venezuela in every bite!
