Ingredients:

  • 1 lb thinly sliced beef (ribeye or sirloin)
  • 1 block of firm tofu, cut into cubes
  • 1/2 bunch of shungiku (chrysanthemum greens) or napa cabbage
  • 1 large onion, thinly sliced
  • 1 bunch of enoki mushrooms, trimmed
  • 1 bundle of shirataki noodles, drained and rinsed
  • 2-3 shiitake mushrooms, thinly sliced
  • 3 green onions, cut into 2-inch pieces
  • 2 tbsp vegetable oil
  • 4-5 cups dashi (Japanese stock) or water

Sukiyaki Sauce:

  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup sake
  • 1/4 cup sugar

Instructions:
1. Prepare the Sauce: In a small saucepan, combine soy sauce, mirin, sake, and sugar. Heat over medium until the sugar fully dissolves. Set aside.

2. Heat the Oil: In a large, deep skillet or a sukiyaki pot, heat the vegetable oil over medium-high heat.

3. Sauté the Beef: Add the thinly sliced beef in batches, searing until lightly browned. Remove from the skillet and set aside.

4. Cook the Vegetables: In the same skillet, add the onions and cook until they start to soften. Add the tofu, mushrooms, and green onions. Sauté for a few minutes until the vegetables are tender.

5. Combine Ingredients: Return the beef to the skillet. Add the dashi (or water) and the prepared sukiyaki sauce. Bring to a simmer.

6. Add Greens and Noodles: When the mixture is simmering, add the shungiku or napa cabbage and shirataki noodles. Cook for another 5-10 minutes until everything is heated through and flavors are well combined.

7. Serve: Sukiyaki is traditionally served at the table from the skillet or pot it was cooked in. Diners can then take portions into their bowls. For an authentic experience, dip the cooked ingredients into raw beaten egg before eating (optional).
