Mexican Chicken Casserole: A Flavorful and Comforting Delight

This Mexican Chicken Casserole is a delightful and savory dish that’s perfect for busy weeknights or when you’re craving something hearty and comforting. Filled with tender chicken, fragrant spices, and gooey cheese, this casserole brings together the vibrant flavors of Mexican cuisine in one easy-to-make meal.

Ingredients:
– 2 cups cooked and shredded chicken breast
– 1 can (10 oz) diced tomatoes with green chilies (Rotel)
– 1 can (10 oz) cream of chicken soup
– 1 can (15 oz) black beans, drained and rinsed
– 1 cup frozen corn kernels
– 1 small onion, finely chopped
– 1 bell pepper, finely chopped (red or green)
– 2 cups shredded Mexican blend cheese
– 1 teaspoon ground cumin
– 1 teaspoon chili powder
– 1/2 teaspoon garlic powder
– Salt and pepper to taste
– 8 small flour tortillas, cut into strips
– 1/4 cup chopped fresh cilantro (optional)
– Non-stick cooking spray

Instructions:

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking dish with non-stick cooking spray.

Step 2: Mix the Ingredients
In a large mixing bowl, combine the shredded chicken, diced tomatoes with green chilies (do not drain), cream of chicken soup, black beans, corn, chopped onion, chopped bell pepper, ground cumin, chili powder, garlic powder, salt, and pepper. Stir well until all ingredients are evenly mixed.

Step 3: Layer the Casserole
Spread a layer of the chicken mixture in the bottom of the prepared baking dish. Place a layer of tortilla strips over the chicken mixture. Repeat the layers, ending with the chicken mixture on top.

Step 4: Add the Cheese
Sprinkle the shredded Mexican blend cheese evenly over the top of the casserole.

Step 5: Bake
Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.

Step 6: Garnish and Serve
Remove the casserole from the oven and let it rest for a few minutes. If desired, sprinkle with chopped fresh cilantro before serving.

Enjoy your Mexican Chicken Casserole! This dish pairs wonderfully with a side of fresh salad, guacamole, and tortilla chips.
