Ingredients:
– 1 lb (450g) ground beef or lamb
– 1 large onion, diced
– 2 cloves garlic, minced
– 2 carrots, peeled and diced
– 1 cup (240ml) frozen peas
– 1 cup (240ml) beef broth
– 2 tbsp tomato paste
– 2 tbsp Worcestershire sauce
– 1 tsp dried thyme
– Salt and pepper to taste
– 4 cups (950ml) mashed potatoes
– 4 tbsp butter
– 1/2 cup (120ml) milk
– 1/2 cup (60g) shredded cheddar cheese
– Fresh parsley, chopped (optional, for garnish)

Instructions:

1. Preheat your oven to 400°F (200°C).

2. Prepare the filling:
– In a large skillet, cook the ground beef or lamb over medium heat until fully browned. Drain excess fat.
– Add the diced onion and minced garlic to the skillet. Cook for about 3-4 minutes, until the onions are soft and translucent.
– Stir in the carrots and cook for another 5 minutes, until they start to soften.
– Mix in the tomato paste, Worcestershire sauce, and dried thyme.
– Pour in the beef broth and let it simmer for around 10 minutes, allowing the flavors to meld together.
– Add the frozen peas and cook for another 2 minutes.
– Season with salt and pepper to taste. Remove from heat.

3. Prepare the mashed potatoes:
– In a pot, boil the potatoes until tender, then drain and return them to the pot.
– Add butter and milk, then mash until smooth and creamy.
– Season with salt and pepper to taste.

4. Assemble the pie:
– Spread the meat mixture evenly in a baking dish.
– Spoon the mashed potatoes over the meat mixture, smoothing it out with a spatula.
– Sprinkle the shredded cheddar cheese on top.

5. Bake:
– Place the dish in the preheated oven and bake for 20-25 minutes, until the top is golden brown and bubbly.

6. Garnish: Optionally, sprinkle fresh parsley over the top before serving.

7. Serve:
– Let the Shepherd’s Pie cool for a few minutes before serving.
