Yorkshire Pudding is a classic English dish that is often enjoyed as part of a traditional Sunday roast. It’s a light and airy baked pudding made from a batter of eggs, flour, and milk. This recipe enhances the classic flavors by pairing it with a rich, herbed gravy that complements the pudding perfectly.

Ingredients:

For the Yorkshire Pudding:
1 cup all-purpose flour
1 cup whole milk
3 large eggs
1/2 teaspoon salt
1/4 cup vegetable oil or beef dripping

For the Herbed Gravy:
2 cups beef or vegetable broth
1 medium onion, finely chopped
2 cloves garlic, minced
1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
2 tablespoons flour
2 tablespoons butter
Salt and pepper to taste

Instructions:

1. Prepare the Batter:
In a mixing bowl, combine the flour and salt.
Create a well in the center and add the eggs.
Gradually whisk in the milk until the batter is smooth and has no lumps.
Let the batter rest for at least 30 minutes to allow the flour to absorb the liquid fully.

2. Preheat the Oven:
Preheat your oven to 425°F (220°C).
Divide the vegetable oil or beef dripping equally among the wells of a 12-cup muffin tin or a large baking dish.
Place the muffin tin or baking dish in the oven to preheat until the oil is very hot, almost smoking.

3. Bake the Yorkshire Pudding:
Once the oil is hot, carefully remove the tin from the oven and quickly pour the batter evenly into each well.
Return the tin to the oven and bake for 20-25 minutes, or until the puddings are puffed up and golden brown.
Do not open the oven door during baking, as this can cause the puddings to collapse.

4. Prepare the Herbed Gravy:
In a medium saucepan, melt the butter over medium heat.
Add the chopped onion and garlic, and cook until softened and golden brown.
Stir in the flour and cook for 1-2 minutes to form a roux.
Gradually whisk in the broth, ensuring there are no lumps.
Add the thyme and rosemary.
Bring the gravy to a simmer and cook until it thickens, about 10 minutes.
Season with salt and pepper to taste.

5. Serve:
* Once the Yorkshire puddings are done, remove them from the oven and serve immediately with the herbed gravy poured over the top or on the side.
