Recipe:
Ingredients:
– 2 cups long-grain parboiled rice
– 3 large ripe tomatoes
– 1 red bell pepper
– 1 yellow bell pepper
– 2 medium-sized carrots, sliced
– 1 cup green beans, chopped
– 1 medium onion, finely chopped
– 3 cloves garlic, minced
– 1-inch piece of ginger, minced
– 3 tablespoons tomato paste
– 1/4 cup vegetable oil
– 2 1/2 cups chicken or vegetable broth
– 1 teaspoon thyme
– 1 teaspoon curry powder
– 1 teaspoon smoked paprika
– Salt and pepper to taste
– Fresh parsley for garnish
Instructions:
1. Prepare the Base: Blend the tomatoes, red bell pepper, and half of the onion together until smooth. Set aside.
2. Sauté Vegetables: In a large pot, heat the vegetable oil over medium heat. Add the remaining chopped onion and cook until translucent. Add the garlic and ginger, sautéing until fragrant for about 1 minute.
3. Cook the Sauce: Add the tomato paste to the pot and stir continuously for 2 minutes. Pour in the blended tomato mixture and cook for about 10 minutes, stirring occasionally, until the sauce reduces and thickens.
4. Incorporate Spices: Add the thyme, curry powder, and smoked paprika to the sauce. Stir well to combine.
5. Add the Broth: Pour in the chicken or vegetable broth and bring the mixture to a boil.
6. Add the Rice: Rinse the rice under cold water until the water runs clear, then add it to the pot. Stir to combine all the ingredients.
7. Cook the Rice: Reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer for 15 minutes.
8. Add Vegetables: Add the sliced carrots, chopped green beans, and diced yellow bell pepper. Stir gently to distribute the vegetables evenly throughout the rice. Cover the pot again and cook for an additional 10-15 minutes, or until the rice is cooked through and the vegetables are tender.
9. Season: Adjust the seasoning with salt and pepper to taste.
10. Serve: Fluff the rice with a fork, garnish with fresh parsley, and serve hot.
