– 2 boneless, skinless chicken breasts, cubed
– 1 tablespoon soy sauce
– 1 tablespoon Shaoxing wine (or dry sherry)
– 1 teaspoon cornstarch
For the Sauce:
– 2 tablespoons soy sauce
– 1 tablespoon hoisin sauce
– 1 tablespoon rice vinegar
– 1 tablespoon sugar
– 2 teaspoons sesame oil
– 2 tablespoons chicken broth or water
– 1 teaspoon cornstarch
For the Stir-Fry:
– 2 tablespoons vegetable oil
– 1/2 cup unsalted roasted peanuts
– 10-12 dried red chilies
– 1 tablespoon Sichuan peppercorns
– 3 cloves garlic, minced
– 1 inch piece fresh ginger, grated
– 1/2 red bell pepper, chopped
– 1/2 green bell pepper, chopped
– 4 green onions, chopped (both white and green parts)
Instructions ###
1. Marinate the Chicken:
In a bowl, combine the chicken cubes with soy sauce, Shaoxing wine, and cornstarch. Mix well and let it marinate for at least 15 minutes.
2. Prepare the Sauce:
In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sugar, sesame oil, chicken broth, and cornstarch. Set aside.
