– 3 garlic cloves, minced
– 1 red bell pepper, chopped
– 1 cup grated mozzarella cheese
– 1 cup grated cheddar cheese
– 1 cup bread crumbs
– 2 tablespoons olive oil
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Salt and pepper to taste
– Fresh parsley for garnish (optional)

Instructions
1. Preheat your oven to 375°F (190°C).

2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until they become translucent and fragrant, about 3-4 minutes.

6. Add the remaining zucchini mixture as a second layer and top with the remaining cheese.

7. Sprinkle the bread crumbs evenly over the top layer of cheese.

8. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, until the cheese is melted and bubbly and the bread crumbs are golden brown.

9. Remove the dish from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley if desired.
