Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 1 large avocado, diced
- 1 cup canned black beans, rinsed and drained
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced (optional, for extra heat)
- 1/4 cup fresh lime juice
- 3 tablespoons olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
Instructions:
- In a medium pot, combine the quinoa and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is tender and the water is absorbed. Remove from heat and let it cool.
- In a large mixing bowl, combine the cooked quinoa, diced avocado, black beans, red bell pepper, red onion, cilantro, and jalapeño (if using).
- In a small bowl, whisk together the lime juice, olive oil, ground cumin, chili powder, garlic powder, salt, and pepper until well combined.
- Pour the lime vinaigrette over the quinoa mixture and toss gently to coat all the ingredients evenly.
- Adjust the seasoning with more salt and pepper if needed.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
- Serve chilled as a light main dish or as a side to your favorite protein.
