Ratatouille is a classic French Provençal stewed vegetable dish that showcases a vibrant array of summer vegetables. Ingredients:
– 2 eggplants, sliced into rounds

Instructions:
1. Preheat the oven to 375°F (190°C). Grease a large baking dish with a little bit of olive oil.
2. Prepare the tomato sauce base: In a large skillet, heat 2 tablespoons of olive oil over medium heat.
