Chicken Karahi: A Spicy and Flavorful Pakistani Delicacy
Chicken Karahi is a traditional Pakistani dish known for its aromatic spices and rich flavors. The dish is cooked in a wok-like pan called a “karahi,” which is where it gets its name from. With a base of tomatoes, green chilies, and a blend of spices, Chicken Karahi is a perfect combination of succulent chicken pieces immersed in a savory and spicy gravy. This dish is often served with naan or rice, making it a hearty meal.
Ingredients:
– 1 kg chicken, cut into pieces
– 4 large tomatoes, finely chopped
– 2 large onions, finely sliced
– 4-5 green chilies, chopped
– 1 tbsp ginger paste
– 1 tbsp garlic paste
– 1 tsp red chili powder
– 1 tsp turmeric powder
– 1 tsp cumin seeds
– 1 tsp coriander powder
– 1 tsp garam masala
– Salt to taste
– Fresh coriander leaves, chopped (for garnish)
– 1/2 cup cooking oil or ghee
– Freshly squeezed lemon juice (optional)
Instructions:
1. Prepare the Chicken:
– Wash the chicken pieces thoroughly and pat them dry. Set aside.
2. Cook the Onions:
– Heat the oil or ghee in a karahi or a deep, heavy-bottomed pan over medium heat.
– Add the cumin seeds and let them sizzle for a few seconds.
– Add the sliced onions and sauté until they turn golden brown.
3. Add Aromatics:
– Add the ginger and garlic pastes to the pan and cook for a couple of minutes until the raw smell disappears.
4. Incorporate Spices and Tomatoes:
– Add the chopped tomatoes, red chili powder, turmeric powder, coriander powder, and salt to the pan.
– Cook the mixture for about 10-15 minutes, stirring occasionally, until the tomatoes break down and the oil starts to separate from the masala.
5. Cook the Chicken:
– Add the chicken pieces to the tomato-onion mixture and stir well to coat the chicken with the masala.
– Cover the pan and cook the chicken on medium heat for about 20-25 minutes, stirring occasionally. Make sure the chicken is fully cooked and tender.
6. Add Green Chilies and Garam Masala:
– Add the chopped green chilies and garam masala to the pan and mix well.
– Cook for an additional 5 minutes to let the flavors meld together.
7. Garnish and Serve:
– Garnish the Chicken Karahi with freshly chopped coriander leaves and squeeze some lemon juice on top if desired.
– Serve hot with naan or steamed rice.
