– 4 oz rice vermicelli noodles
– 8 rice paper wrappers

– 1/2 cup fresh Thai basil
– 1/2 cup shredded carrots
– 1 cucumber, julienned
– 1 avocado, sliced (optional)
For the Peanut Dipping Sauce:
– 1/4 cup hoisin sauce
– 3 tbsp peanut butter
– 1 tbsp soy sauce
– 1 tbsp rice vinegar
– 2 tsp sugar
– 1/2 cup water
– 1-2 cloves garlic, minced
– 1 tsp sriracha (optional)
– Crushed peanuts (for garnish)
Instructions:
1. Prepare the Vermicelli Noodles:
– Cook the rice vermicelli noodles according to the package instructions. Drain and set aside.
2. Prepare the Shrimp:
– Slice each cooked shrimp in half lengthwise. Set aside.
3. Prepare the Rice Paper:
– Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes pliable. Remove and set on a damp work surface or clean towel.
4. Assemble the Spring Rolls:
– Place 2 shrimp halves, cut side up, on the lower third of the rice paper.
– Add a small handful of noodles, lettuce, mint, cilantro, Thai basil, carrots, cucumber, and avocado (if using) above the shrimp.
– Fold the bottom of the rice paper over the fillings, then fold in the sides and roll tightly to enclose the fillings.
– Repeat with the remaining ingredients to make more rolls.
5. Make the Peanut Dipping Sauce:
– In a small saucepan, combine hoisin sauce, peanut butter, soy sauce, rice vinegar, sugar, water, garlic, and sriracha (if using).
– Cook over medium heat, stirring continuously until smooth and slightly thickened, about 3-5 minutes.
– Remove from heat and let cool slightly. Garnish with crushed peanuts.
