Kritharaki, also known as orzo, is a versatile pasta that resembles rice. This hearty bake brings together Kritharaki, juicy tomatoes, and fresh herbs to make a delicious and comforting dish. Perfect for weeknights or family gatherings, this bake is rich in flavors and nutrients, and is sure to be a crowd-pleaser.

Ingredients:
– 1 cup Kritharaki (orzo pasta)
– 1 can (14.5 oz) diced tomatoes
– 1 cup tomato sauce
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 cup vegetable broth
– 1 cup water
– 1 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– 2 tablespoons olive oil
– 1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)
– 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
– 1 teaspoon dried oregano
– Salt and pepper to taste

Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a large oven-safe skillet, heat the olive oil over medium heat.
3. Add the chopped onion and cook until it becomes translucent, about 3-4 minutes.
4. Stir in the minced garlic and cook for another minute, until fragrant.
5. Add the diced tomatoes, tomato sauce, vegetable broth, and water to the skillet. Stir well to combine.
6. Add the Kritharaki (orzo pasta) to the mixture. Stir to ensure all the pasta is submerged in the liquid.
7. Season with dried oregano, salt, and pepper. Mix well.
8. Allow the mixture to come to a simmer, stirring occasionally, until the pasta is almost cooked through, about 8-10 minutes.
9. Stir in the chopped basil and parsley.
10. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the top of the pasta mixture.
11. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly, and the bake is golden brown on top.
12. Carefully remove from the oven and let it cool for a few minutes before serving.
