Ingredients:

For the Soy-Glazed Salmon:
4 salmon fillets
1/4 cup soy sauce
2 tablespoons honey
1 tablespoon rice vinegar
2 teaspoons grated fresh ginger
2 cloves garlic, minced
1 tablespoon sesame oil
1 tablespoon olive oil
Sesame seeds for garnish
Chopped green onions for garnish

For the Sesame Spinach:
1 lb fresh spinach, washed and trimmed
1 tablespoon soy sauce
1 tablespoon sesame oil
1 tablespoon sesame seeds
Salt and pepper to taste

Instructions:

1. Marinate the Salmon:
– In a small bowl, whisk together the soy sauce, honey, rice vinegar, ginger, garlic, and sesame oil.
– Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate in the refrigerator for at least 30 minutes.

2. Cook the Salmon:
– Preheat the oven to 375°F (190°C).
– Heat the olive oil in an oven-safe skillet over medium-high heat.
– Once the skillet is hot, remove the salmon from the marinade (reserving the marinade) and place the fillets in the skillet, skin side up.
– Sear the salmon for about 2 minutes or until it develops a nice crust.
– Flip the salmon and pour the reserved marinade over it.
– Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.

3. Prepare the Sesame Spinach:
– While the salmon is baking, heat the sesame oil in a large skillet over medium heat.
– Add the spinach and sauté just until wilted, about 2-3 minutes.
– Stir in the soy sauce and sesame seeds, and season with salt and pepper to taste. Remove from heat.

4. Serve:
– Plate the salmon fillets and drizzle any remaining glaze from the skillet over the top.
– Serve alongside the sesame spinach.
– Garnish with sesame seeds and chopped green onions.

Enjoy your delightful Soy-Glazed Salmon with Sesame Spinach as a balanced and flavorful meal!
