Hearty Hungarian Goulash: A Robust and Flavorful Stew to Warm Your Soul
Hungarian Goulash is a traditional, hearty stew originating from Hungary. Ingredients:
- 2 lbs beef chuck, cut into 1-inch cubes

- 2 tablespoons tomato paste
- 4 cups beef broth
- 2 large carrots, sliced
- 2 medium potatoes, peeled and cubed
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef cubes and cook until browned on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the chopped onions and cook until soft and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
- Stir in the sweet Hungarian paprika and caraway seeds, ensuring the onions and garlic are well-coated with the spices.

- After 1 hour, add the sliced carrots, cubed potatoes, and chopped bell peppers to the pot. Season with salt and pepper to taste. Continue to simmer for another 30-45 minutes, or until the vegetables are tender and the beef is fork-tender.
