– 1 cup (240ml) water
– 1 1/4 cups (250g) sugar
– 4 tablespoons (40g) cornstarch
– 1 tablespoon lemon zest
– 4 large egg yolks
– 1/4 teaspoon salt
– 2 tablespoons unsalted butter
– 2 packets (14g total) unflavored gelatin
– 1/4 cup (60ml) cold water
Instructions:
1. Prepare the crust:
1. Preheat your oven to 350°F (175°C).
2. In a medium bowl, combine the crushed digestive biscuits (or graham crackers) with the sugar and melted butter.
3. Press the mixture into the bottom and up the sides of a 9-inch tart pan with a removable bottom.
