– 1 tbsp coriander seeds
– 1 tbsp fish sauce
– 1 tbsp soy sauce

– 1 package rice noodles (pho noodles)
– Fresh herbs (basil, cilantro, mint)
– Bean sprouts
– Lime wedges
– Thinly sliced red chili or sriracha
– Thinly sliced green onions
– Hoisin sauce (optional)

Instructions:

1. Roast the Aromatics: Preheat the oven to 350°F (175°C). Place the onion and ginger on a baking sheet and roast for about 20 minutes until they are slightly charred.

2. Prepare the Broth: Fill a large pot with 10 cups of water. Add the beef bones, roasted onion, and ginger. Bring to a boil and then reduce to a simmer, skimming off any foam that rises to the top.

3. Add Spices: Place the cinnamon stick, star anise, cloves, cardamom pod, and coriander seeds in a spice bag or cheesecloth. Add this to the pot. Simmer uncovered for about 2-3 hours, allowing the flavors to meld together.

4. Season the Broth: Remove the spice bag and bones. Add the fish sauce, soy sauce, and salt to the broth. Adjust the seasoning to taste.

5. Cook the Noodles: While the broth is simmering, cook the rice noodles according to the package instructions. Drain and set aside.

6. Assemble the Pho: Divide the cooked rice noodles into bowls. Top with thin slices of raw beef. Pour the hot broth over the beef and noodles, which will cook the meat to a tender perfection.

7. Garnish: Serve with fresh herbs, bean sprouts, lime wedges, sliced chili, green onions, and hoisin sauce on the side. Allow everyone to customize their Pho to their liking.
