Ingredients:

  • 4 bell peppers (any color), tops cut off and seeds removed
  • 1 cup quinoa
  • 2 cups chicken or vegetable broth
  • 1 lb ground lamb
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup golden raisins
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup crumbled feta cheese (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the quinoa under cold water. In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the quinoa, reduce the heat, and let it simmer for about 15 minutes, or until all the liquid is absorbed. Fluff with a fork and set aside.
  3. In a large skillet over medium heat, add olive oil and sauté the chopped onion and minced garlic until they are translucent and fragrant.
  4. Add the ground lamb to the skillet, breaking it apart with a spoon. Cook until the lamb is browned and cooked through.
  5. Stir in the cumin, smoked paprika, salt, and pepper. Add the golden raisins and cook for another 2 minutes.
  6. Combine the cooked quinoa with the lamb mixture in the skillet. Mix in the chopped parsley.
  7. Stuff each bell pepper with the quinoa and lamb mixture, packing it down lightly.
  8. Place the stuffed peppers in a baking dish. If desired, sprinkle a bit of crumbled feta cheese on top of each stuffed pepper.
  9. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and slightly browned on the edges.
  10. Remove from the oven and let cool for a few minutes before serving.
