  • 3 green onions, chopped
  • 4 cloves garlic, minced

  • 2 tablespoons brown sugar
  • 1 teaspoon salt

  1. In a spice grinder or using a mortar and pestle, grind the allspice berries and black peppercorns until fine.
  2. In a large mixing bowl, combine the ground allspice, black pepper, ground thyme, cinnamon, nutmeg, ginger, garlic powder, and onion powder.
  3. Add the soy sauce, white vinegar, lime juice, and olive oil to the bowl, mixing well to create a paste.
  4. Stir in the chopped green onions, minced garlic, Scotch bonnet peppers, brown sugar, and salt into the spice mixture.
  5. Rub the jerk seasoning thoroughly over the chicken quarters, ensuring they are evenly coated. You can optionally make small slashes in the chicken to allow for better absorption of the marinade.
  6. Cover the seasoned chicken with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to let the flavors meld.
