Exquisite and Savory Oysters Rockefeller Delight
Oysters Rockefeller is a famous and luxurious seafood dish that originated in New Orleans. This dish features oysters on the half shell, topped with a rich sauce of butter, herbs, and breadcrumbs, then baked until golden and bubbly. The combination of the succulent oysters and the decadent topping makes for an unforgettable culinary experience.
Ingredients:
– 24 fresh oysters, shucked
– 4 tablespoons unsalted butter
– 1/2 cup finely chopped shallots
– 2 cloves garlic, minced
– 2 cups fresh spinach, finely chopped
– 1/2 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 1/2 cup breadcrumbs
– 2 tablespoons Pernod or any anise-flavored liqueur
– Salt and freshly ground black pepper, to taste
– 1/2 cup finely chopped parsley
– Lemon wedges, for garnish
Instructions:
1. Preheat your oven to 425°F (220°C).
2. Melt the butter in a large saucepan over medium heat. Add the shallots and garlic, and sauté until softened, about 2-3 minutes.
3. Stir in the chopped spinach and cook until wilted, about 3 minutes. Add the heavy cream and bring the mixture to a simmer. Cook for 5-7 minutes until the mixture thickens slightly.
4. Remove the saucepan from heat and stir in the grated Parmesan cheese and Pernod. Season with salt and black pepper to taste. Allow the mixture to cool slightly.
5. Arrange the oysters on a baking sheet or ovenproof dish.
6. Spoon a generous amount of the spinach mixture over each oyster, then sprinkle with breadcrumbs and chopped parsley.
7. Bake in the preheated oven for 10-12 minutes, or until the topping is golden brown and the oysters are cooked through.
8. Remove from the oven and let cool slightly before serving.
9. Garnish with lemon wedges and serve immediately.
