Quinoa and Roasted Vegetable Farro Salad with Fresh Herbs

Ingredients:
- 1 cup quinoa
- 1 cup farro
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1 red onion, diced
- 2 cups cherry tomatoes, halved
- 3 tablespoons olive oil
- Salt and pepper, to taste
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1 lemon, juiced
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 clove garlic, minced
Instructions:
- Preheat the oven to 400°F (200°C).
- In a large pot, cook the quinoa and farro according to the package instructions. Drain any excess water and set aside to cool.
