Hearty Norwegian Yellow Split Pea and Winter Vegetable Soup

Ingredients:
- 2 cups dried yellow split peas, rinsed and drained
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 parsnips, diced
- 1 small rutabaga, peeled and diced
- 4 cups vegetable or chicken broth
- 4 cups water
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (optional, for serving)
Instructions:
- In a large pot, heat a little oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrots, parsnips, and rutabaga. Sauté for another 5-7 minutes until the vegetables start to soften.
- Add the yellow split peas, vegetable or chicken broth, and water to the pot.
- Add the bay leaves, dried thyme, and dried rosemary. Stir well to combine all the ingredients.
- Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 1-1.5 hours until the split peas are tender and the soup has thickened. Stir occasionally to prevent the peas from sticking to the bottom of the pot.
- Once the soup has reached your desired consistency, remove the bay leaves. Season with salt and pepper to taste.
- Ladle the soup into bowls and garnish with fresh parsley. Serve with lemon wedges on the side, if desired, for a zesty kick.
