Sumptuous Greek Tofu and Pita Salad
This Greek Tofu and Pita Salad is a delightful fusion of traditional Greek flavors and a modern twist with the addition of protein-rich tofu. Ingredients:
For the Tofu Marinade:
– 1 block of firm tofu, drained and pressed
– 2 tablespoons olive oil
– 3 tablespoons lemon juice
– 3 cloves garlic, minced
– 1 teaspoon dried oregano
– 1 teaspoon dried thyme
– ½ teaspoon salt
– ½ teaspoon black pepper
For the Salad:
– 2 pita bread, toasted and cut into bite-sized pieces
– 1 large cucumber, diced
– 1 cup cherry tomatoes, halved

– 1 green bell pepper, diced
– 1/2 cup Kalamata olives, pitted and halved

For the Dressing:
– 3 tablespoons olive oil
– 2 tablespoons red wine vinegar
– 1 tablespoon lemon juice
– 1 teaspoon Dijon mustard
– 1 teaspoon honey
– 1/2 teaspoon dried oregano
– Salt and black pepper to taste
Instructions:
1. Marinate and Cook the Tofu:
1.1. In a medium bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper to make the marinade.
