Ingredients:
– 500g button mushrooms, sliced
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 4 cups chicken or vegetable broth
– 1 cup heavy cream
– 2 tablespoons butter
– 2 tablespoons olive oil
– 1 tablespoon all-purpose flour
– 1 bay leaf
– 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
– Salt and pepper, to taste
– Chopped fresh parsley, for garnish
Instructions:
1. Heat olive oil and butter in a large pot over medium heat. Add the chopped onions and cook until they are soft and translucent, about 5 minutes.
