Ingredients:
1 cup orzo pasta
2 tablespoons olive oil
1 small onion, finely chopped
2 cloves garlic, minced
10 oz (280g) mixed mushrooms (such as cremini, shiitake, and button), sliced
1/2 cup white wine
3 cups vegetable or chicken broth, kept warm
1/2 cup grated Parmesan cheese
2 tablespoons butter
Salt and black pepper to taste

Instructions:

1. Warm the broth. In a small saucepan, warm the vegetable or chicken broth over low heat and keep it on a low simmer.
2. Sauté the aromatics. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes. Stir in the minced garlic and cook for another minute or until fragrant.
