This Hearty Kale and Farro Harvest Salad is a nutritious and satisfying dish perfect for any time of the year. Ingredients:
– 1 cup farro
– 4 cups kale, finely chopped
– 1 apple, diced
– 1/2 cup dried cranberries
– 1/4 cup chopped pecans
– 1/4 cup crumbled feta cheese

For the vinaigrette:
– 1/4 cup olive oil
– 2 tbsp apple cider vinegar
– 1 tbsp honey
– 1 tsp Dijon mustard
– Salt and pepper to taste

Instructions:

6. Sprinkle the crumbled feta cheese over the top of the salad.
