Hearty Tuscan Chicken and Cannellini Bean Soup
This is a classic Italian soup that combines tender chicken, creamy cannellini beans, and a medley of aromatic vegetables. Ingredients:
- 1 lb boneless, skinless chicken thighs
- 2 cans (15 oz each) cannellini beans, drained and rinsed
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 carrots, peeled and diced
- 2 stalks celery, chopped
- 6 cups chicken broth
- 1 cup diced tomatoes (canned or fresh)
- 2 tsp fresh thyme leaves
- 1 tsp dried rosemary
- 2 bay leaves
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped (optional)
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the chopped onions, carrots, and celery. Cook, stirring occasionally, until the vegetables begin to soften, about 5-7 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Push the vegetables to the side of the pot and add the chicken thighs. Cook the chicken until browned on both sides, about 5 minutes per side. Once browned, remove the chicken from the pot and set aside.
- To the pot, add the chicken broth, diced tomatoes, thyme, rosemary, and bay leaves. Bring to a boil.
- Once the broth is boiling, return the chicken to the pot and reduce the heat to a simmer.
- Cover and let the soup simmer for 25-30 minutes, or until the chicken is cooked through and tender.
- Remove the chicken from the pot once more, shred it using two forks, and return the shredded chicken to the pot.
- Add the cannellini beans and season the soup with salt and pepper to taste. Continue to simmer for another 10 minutes to allow the flavors to meld together.
- Remove the bay leaves before serving.
- Serve hot, topped with grated Parmesan cheese and freshly chopped parsley if desired.
