Classic Chicken Marsala: A Savory Italian-American Delight

Chicken Marsala is a beloved Italian-American dish that marries the robust flavors of Marsala wine with tender, juicy chicken breasts and earthy mushrooms. This dish, known for its rich and slightly sweet sauce, makes for a perfect dinner that feels both fancy and comforting. It’s usually served over pasta or alongside mashed potatoes, and it’s sure to impress your family or guests with its delectable taste and elegant presentation.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 4 tablespoons olive oil
  • 1 cup sliced mushrooms (cremini or button mushrooms work well)
  • 3/4 cup Marsala wine
  • 1/2 cup chicken broth
  • 2 tablespoons unsalted butter
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions:

  1. Place the chicken breasts between two sheets of plastic wrap or parchment paper and gently pound them to an even thickness of about 1/4 inch.
  2. Season both sides of the chicken breasts with salt and pepper.
  3. Place the flour in a shallow dish. Dredge each chicken breast in the flour, shaking off any excess.
  4. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 3-4 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the sliced mushrooms. Cook, stirring occasionally, until the mushrooms are browned and tender, about 5 minutes.
  6. Pour in the Marsala wine and chicken broth, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a boil, then reduce the heat and simmer for about 10 minutes, until the sauce is reduced by half.
  7. Stir in the butter until melted and the sauce is smooth. Return the chicken breasts to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes, until the chicken is heated through.
  8. Garnish with chopped fresh parsley before serving.
